Stuffed Pepper Soup Recipe
Stuffed pepper soup!

One of my daughter‘s favorite things I make is stuffed pepper soup, so when I sent her grocery shopping earlier this week she bought an ENORMOUS bag of green peppers and an equally enormous bag of rice lol - I got the hint. So today I made some and I thought I would share the recipe with you! Especially now that we have the new stove! It cooks great!

My recipe is super easy to follow and uses frozen ground beef. It all cooks in one pot with the exception of the rice (we use an inexpensive rice cooker for that!) - but you actually could cook the rice last in the soup broth if you wanted!

Ingredients

  • 1 lb ground beef
  • 3-4 green peppers
  • 1 cup water
  • 1 carton of chicken broth
  • 2 cans condensed tomato soup
  • 1 can petite diced tomatoes
  • Onion powder (about 1 tsp)
  • Garlic powder (about 1 tsp)
  • Dash of Celery Salt
  • Italian Seasoning
  • Salt + Pepper to taste
  • 2 cups cooked rice

Optional but highly recommended: Butter and a fresh loaf of Italian bread to go with the soup!

Directions

  1. Place ground beef in large stock pot with 1 cup of water. Add green peppers and simmer until ground beef is browned and peppers are tender.
  2. Add chicken broth, tomato soups, diced tomatoes and seasonings to taste. Bring to a low boil and simmer.
  3. Add rice and stir! Let it cool for 5 minutes and serve!
